Computers are like cats. IF they do what you tell them, they do PRECISELY

what you tell them, never mind what you meant!

I'm going to be overwhelmed with pate recipes. A friend sent one which is

half chicken liver and half beef liver, and sauteed in rendered chicken

fat. (A good Jewish recipe.)

Speaking of chicken fat, my grandmother told me about her chicken

liver recipe and it is also made in chicken fat sometimes they even

used duck fat back in the day. She thought this would be totally

legal for me.

My question is would this be considered advanced? How much more fatty

is chicken fat from lets say olive oil or butter?

I don't eat too much fat because of my RUQ issue- but I could

definitely use some! I keep trying to find new fats. Like, if I eat

a rib eye steak which I like if I eat the fat even by mistake I am

totally miserable!

Thanks to everyone for your great suggestions!

I have my bison liver (and a couple of bison knees as treats for Shadow

and Sunny when I come home from the hospital) on order.

I'm also going to smoke a bison brisket when the order arrives.

Hey Marilyn,

There is an very small organic butcher (some of it grass fed or

pasture fed- I still don't quite know the difference.. is it that if

the animals are grass fed they actually bring the grass to them and

they eat and pasture fed means they actually roam and graze grass??)

anyway- very close to my house that sells many buffalo products. I

can ask him if you want me to??

I was there just last week and he has buffalo stuff don't know about

the liver. Do you have any questions you want me to ask him directly?

I have become friendly with them.
