Coconut oil, Ghee, nut oils are all yummy to add. Coconut oil can have an " overwhelming " taste- so keep that in mind. Loving coconut butter- it wouldn't bother me too much. My mom just bought me a Blendtech which is cheaper than the Vitamix but has a 3 horsepower motor and it actually micronizes the food!! Awaiting anxiously! Real coconut oil that doesn't solidify would be awesome I think--haven't tried that, let us know :-). I'm processing some pecans right now and my poor old food processor has been complaining non-stop. Silly old machine. I didn't use it for the first 10 years...you'd think it would be happy for the attention it's now getting. OK, adding the coconut oil made it more moist, but didn't get rid of the tiny nut pieces. I planned on using the pecan butter in bread. Do you think those tiny chunks are too much to digest? So like if you were to make lets say a batch of pecanbutter with coconut oil and put it in the fridge it will change the texture of the pecanbutter because the coconut oil in the recipe will solidify. I think this is why some people are careful with adding coconut oil to certain recipes. I seem to remember Marilyn warning me about this and saying almond oil is quite yummy to add to nut butters.
