I toast the nuts a little and add some walnut oil and salt. The

pecans usually go fast. Cashews are harder it seems like so I

definitely toast and add oil to those.

Thanks Deb. No walnut oil, but I do have organic coconut oil from

Digestive Wellness. Think that's OK to use?

Hi Caroline,

Some people find they need to use almond flour or pecan flour to get

that super smooth consistency. Coconut oil, Ghee, nut oils are all

yummy to add. Coconut oil can have an " overwhelming " taste- so keep

that in mind. Loving coconut butter- it wouldn't bother me too much.

My mom just bought me a Blendtech which is cheaper than the Vitamix

but has a 3 horsepower motor and it actually micronizes the food!!

Just on a thought, if the coconut oil is solid at room temp, it will

re-solidify (?) when it cools off. Real coconut oil that doesn't

solidify would be awesome I think--haven't tried that, let us know

:-).

The coconut oil from Digestive Wellness is liquid. Not certan what

you mean about re-solidifying.

I'm processing some pecans right now and my poor old food processor

has been complaining non-stop. Silly old machine. I didn't use

it for the first 10 years...you'd think it would be happy for the

attention it's now getting.

OK, adding the coconut oil made it more moist, but didn't get rid of

the tiny nut pieces. I planned on using the pecan butter in bread.

Do you think those tiny chunks are too much to digest?

mine is pretty thick I guess and the machine gets HOT but didn't have

to work so hard when I used olive oil in it

Hi Caroline,

What Debbie brought up about it re-solidifying is when coconut oil

reaches a certain low temperature it becomes a block. So like if you

were to make lets say a batch of pecanbutter with coconut oil and put

it in the fridge it will change the texture of the pecanbutter because

the coconut oil in the recipe will solidify. I think this is why some

people are careful with adding coconut oil to certain recipes. I seem

to remember Marilyn warning me about this and saying almond oil is

quite yummy to add to nut butters. I have yet to find almond oil in

an opaque glass bottle and not a tin bottle.

She mentioned it on list a few weeks ago.

You could also try walnut oil - which is easy to find, I think Hain makes

it - or hazelnut oil, which I've seen at Fairway and maybe Whole Foods.

the pecan and cashew nut butters i've been making don't really need

oil...they get soft and wettish after processing them forever. i

just always seem to end up with small chunky pieces nut butters.

kinda like Skippy crunky peanut butter consistency. i think it must

be my food processor isn't strong enough to grind everythnig

smooth.

is it necessary to refrigerate the nut butters?

it's not hard at all and as much as i'd love to say take a short cut -

we are always safer with our own - if a product has less than 2% of

something in it - they don't have to list it - ridiculous but true

i love my pecan butter - don't miss the other stuff at all :-)
