Guest guest
Hey Eileen.. G'mornin'... Recently, I learned from Mimi that Elaine said that Zucchini's if well cooked (I steam) don't need to be deseeded. I also don't deseed yellow zucchini. I do deseed the yellow squash though. As to not be confused here are pictures; http://en.wikipedia.org/wiki/Zucchini That's of the yellow and green zucchini The yellow squash is this one; http://en.wikipedia.org/wiki/Squash_(plant) So what I do is I peel and steam for about 20 minutes, throw in blender and add ghee and sea salt to my liking. I whiz it up (make sure there is an opening on the top of blender as the heat from the cooked veg needs to escape- if you don't leave a little opening you will be wearing and cleaning zucchini for the rest of the day! I generally take out the little insert plastic lid off and put my kitchen towel on the top of blender) I pour in a bowl and eat it. I do not feel the seeds at all. They totally like dissolve/disintegrate. I can understand the apprehension though of deseeding- I was doing this for a while and decided to test it since it was more economical and easier not to deseed. It works for me but I don't know if it would work for everyone. HTH, Jodi SCD 11 months Crohn's/Colitis Have you tried ghee yet? Wonderful source of calories, fat and flavor!! I smother it on like everything (very small amounts though) > > no answer but a question for you - you eat zucc squash right??? do you > eat it as noodles just or attempt the seeds yet - if so puree the seed > parts??? > thanks eileen
Guest guest
MMMM... in greek tzatziki sauce. Yum Yum!!! You can keep the seeds out too. I haven't had any luck whatsoever cooking them. I love Alton Brown... a lot of his recipes are already SCD legal or can easily be converted into something SCD legal. I haven't made the greek lamb yet, but the recipe is so easy I have to try it soon. http://www.foodnetwork.com/recipes/alton-brown/gyro-meat-with-tzatziki-sauce-recipe/index.html or http://tinyurl.com/5sbw9t Misty Kimble CD Subject: introducing cucumbersTo: BTVC-SCD Date: Sunday, September 7, 2008, 7:57 AM Anyone have a good way to introduce cucumbers?Like preparation etc? Thanks,JodiSCD 11 monthsCrohn's/Colitis
Guest guest
Hi Misty, This may be a stupid question.. But I was wondering like when you introduce a new food- do you introduce it as part of a recipe? Like the Tzatziki? Or do you eat it straight up? I have generally tried to keep a new food item separate and I steam it and try it. Never thought of adding it into a recipe. Steaming cucumbers is horrible!!!! Beyond vile and atrocious. Maybe I should juice it and dilute it? Jodi SCD 11 months Crohn's/Colitis > > MMMM... in greek tzatziki sauce. Yum Yum!!! You can keep the seeds out too. Guest guest
No questions are stupid!!! For me, how I introduce it depends on the food. I usually try things alone before introducing them to a recipe. However, I tolerated everything else in tzatziki and so I figured if I didn't toerate the tzatziki, it was because of the raw cucumbers. I had no problems. I have never tried salting cucumbers to dilute and cook them. I just think they are too liquid to cook with and turn into a yucky, slimy mush. YUCKO!!! Misty Hi Misty,This may be a stupid question.. Guest guest
Mara, DO you think I should heat the fresh juice up before I eat it? Or is that no needed? Baden suggested I try juicing to introduce new things into my diet. I would totally dilute just wasn't sure if raw was a good/cautious/slow way to proceed!! Thanks for being so helpful! Guest guest
Sorry about all the typos. Syntax/editing is not one of my strong points- LOL! That's why all my writing projects look like utter disasters until I go in with a fine comb and hazmat suit. Heh...
