" Just under " is a bit vague, but if it really was just under, that seems fine as that is the zone the acidophilus love. But if you are worried, I'd allow it to ferment several more hours. Fine to eat. (Though, just for future reference, as long as you haven't started refrigerating yet, you can always restart up the fermentation process.)
