I'm interested in trying fermented foods and I checked out the

Rejuvelac website that you suggested. How do we know what bacteria

are being produced when we make our own Cabbage Rejuvelac and if

they're SCD legal? Can this be a substitute for yogurt (if you're

allergic to milk) or is it better to take an acidophilus supplement?

It sounds like you'd have to make a batch every day if the liquid from

the previous batch stays good for only one day in the refrigerator -

is that right? Has anyone tried it?

Thanks. I checked the site, but they were talking about adding 3

kinds of lactobacilli. I wonder what happens if you just use cabbage,

water and salt.

If I understand the report I think they are saying that

Lactobacillus plantarum C3, Lactobacillus casei A4, and

Lactobacillus delbrueckii D7 grow well in Cabbage juice naturally.

When you do a Google scholar search for " cabbage probiotic " you get

this result...

To me it sounds like they added the probiotics (like when we add a

starter to milk to make yogurt): " Cabbage juice was inoculated with

a 24-h-old lactic culture " .

When I made cabbage rejuvelac a few times years ago, I added L.

Acidophilus to the jar so I'd know for sure that was one of the

bacterial strains present. The instructions I had suggested this.

Unfortunately my body violently rejected cabbage rejuvelac, even

though I diluted the juice by a huge amount. So I haven't tried it

in several years. It wasn't difficult to make, howver.

I just take an acidophilus supplement several times a week. My body

tolerates this method the best.
