Hi, just some ideas. You could use shredded cheese with French cream

and/or butter with white pepper and/or cayenne pepper (like 1/4 t.)

and on low heat melt it into a sauce. Usually a stick of butter to 2

c or 3 c of cheddar or a mix of legal cheeses like parmesan and

cheddar. I did a search on foodnetwork.com and found cheese sauce

(mostly for mac n cheese but not all) and the variations above (sans

flour or milk).

Remember not to buy pre-shredded cheese, you have to shred it yourself. Where is the recipe posted for that? Listen when are you going to have a cookbook out? Or even better a hands on class ...you could make alot of money!!!

Well, I'm trying to get my house cleaned up so that I can have people

over without being embarrassed. Then I can consider having a

hands-on SCD cooking class.

LOL! I was joking with a friend of mine who has a huge RV that " when

I win the lottery, " I'd love to buy one and equip it with a full SCD

kitchen and then roam the country for a few years giving SCD cooking

lessons.

As for the cook book, I've been trying to get it assembled and ready to

print for altogether too long.

I really could help with the cookbook if you told me what you needed done and I could work some of the time from here --- I am not bringing my computer to N.O. and you know I don't have a laptop --Do we have to use PageMaker -- Wouldn't PDF format be better?

PDF would be good -- but it has to be a particular kind of PDF to upload

to Lulu -- I was figuring on doing this through

www.lulu.com --

and they either want a Word doc, or a really precise PDF.
