You could use shredded cheese with French cream and/or butter with white pepper and/or cayenne pepper (like 1/4 t.) and on low heat melt it into a sauce. Usually a stick of butter to 2 c or 3 c of cheddar or a mix of legal cheeses like parmesan and cheddar. I did a search on foodnetwork.com and found cheese sauce (mostly for mac n cheese but not all) and the variations above (sans flour or milk).
