Hi:

I've been using the "pressed dry cottage cheese" from Western Creamery

thus far. For some reason it causes almost immediate gas after eating

it, especially in the form of the cheese cake recipe which is

recommended in the starter diet. It has about 4g carbs / 100g and I

wonder if this is what the problem is for me. I was wondering if

anyone know where to get Farmer Cheese or a source of DCCC with

absolutely 0 g of carbs. I've seen it on the internet but haven't been

able to find it here.

Hi Bruce. I haven't had any problems with Western pressed dry cottage

cheese. I guess I am lucky. I love the cheesecake and never get gas from it.

Do you get gas after eating the cheese plain?

The only other brand I am aware of that might be available in Central Canada

is Mehadrin, which is a Kosher dairy. I have just sent an e-mail to the

company to ask whether their farmer's cheese is the same as dry curd cottage

cheese. It probably is, as the website shows that this cheese has zero

carbohydrates.

I have never been able to find Mehadrin farmer cheese at any of the stores I

have searched. I usually buy my Western pressed dry cottage cheese at a

specialty cheese store that used to be strictly Kosher but has evolved over

the years. [Daiter's - mentioning it here for the benefit of other

Torontonians]. I should ask them about Mehadrin the next time I am there, in

case they do sometimes sell it.
