This way they freeze as individual pieces, and can be taken out as such. ie. They don't stick together in one solid mass. You can certainly freeze things without this step, but you risk getting a giant glob of stuff that you can't get apart.Goes for veggies, cookies, anything else. and frozen before putting in containers? Why can you not just put the

items into the containers and avoid this step?_

Well, you could. However, laying them out on the trays allows the pieces

to freeze individually and then you don't have to wait for a big clump to

thaw before you can use it.
