I am aware that the Lyosan yogurt starter has both milk powder and sucrose in it, and many people are likely to ask why that is legal (since we say that the sugar is eaten up by the bacteria in the course of fermentation) when this store bought almond milk is not. There's a major difference between the amount of sweetener in a liter or two liters of almond milk versus the tiny amount in a packet of yogurt starter. It's simply not possible for the yogurt bacteria to consume that much sugar and eliminate it. Secondly, the " natural flavors " in the commercial almond milk render it completely unacceptable. We have no idea what is in those natural flavors, and no way to find out what is in them, and therefore must invoke the cardinal rule of SCD: " When in doubt, there's no doubt, leave it out!
