That stinks I've made it five times now, and it's come out fine every time. Actually, the last time came out the best b/c I used the advice from here to heat up the gelatin after I sprinkled it in the water and let it sit for ten minutes or so, then I heated it over a very low heat. No lumpy, bumpy pie. Except that's not your problem....Hmm. I'm wondering if it's because there's a difference in our gelatin? I use kosher fish gelatin, not Knox, which is what I assume you're using. Any gelatin experts here or pie-making experts want to chime in? Sorry, Eileen, to not be more help. At least the coconut cream will keep for a long time. Maybe it will eventually agree with you. We love it in smoothies, ice cream, and popsicles.
