Confused about veggies

I have gastroparesis and everything I eat sits in my gut for a long

time. I'm trying to work veggies into my diet but they contain

trisaccharides, which give me trouble. Why are veggies okay on SCD if

they contain tri/polysaccharides? Do these sugars break down in

cooking? Are all veggies equal in digestability if I cook them as soft

as possible?
