My husband and I are contemplating traveling for a long weekend with the kids, but we are incredibly intimidated on how to prepare food, and what to bring, etc. We'd be staying at a hotel, no kitchen. Does anyone else have any tips?? We are will only have been SCD for about 2 months when this trip will occur, so we are still somewhat limited in our choices. Thanks for the help! How are the sleeping/pain issues going? Also, your menu sounds FANTASTIC. I hope to be able to prepare that one day for road trips too. My husband was just asking me this evening if I thought I would be well enough to leave the city for 3 days. I remembered people having a fridge in the car- what model do you have? I think I could have some basic food prepared to go but still I am worried. Your menu really inspired me as to what can be possible for me in the future! Have oodles of fun.. I have a " kitchen box " with a toaster oven, inexpensive silverware, plates, cups, toaster oven trays, etc. I make entrees and/or vegetables and pack them in snap top boxes, then freeze. I make Krivel Krackers and dips. I carry my own butter, mustard, etc. Take a heavy duty extension cord and plug the toaster oven into the heavy duty socket in the bathroom. Make sure the toaster oven is cool and out of sight in the kitchen box before you leave for the day. As for what you take -- it's whatever you're eating now, but packaged for travel. You'll forget stuff and have to go out to the nearest Wal-Mart for something. A number of our favorite authors will be there, and the conference chairman is a friend of ours dating back to the 1980s. We have a large camping fridge that plugs into the cigarette lighter. Just pack three breakfasts, three lunches, three dinners, and take a toaster oven to heat things up in! If you can make it all the way to Israel, you can manage three days! Oh, and, er, don't forget something to eat off... I did one time, which is why we now have plates and silver for the kitchen box! <g> I did test positive for sleep apnea, which interestingly, can be related to IBS. I had the titration Wednesday night, which is where they fit you with a mask, and then you go to sleep and they figure out what pressure you need to not have breathing problems. Now I just have to wait for the pulmonologist to make that determination, tell my doctor, and get the prescription written, and get my machine. I'm not looking forward to becoming a " hose head, " but if it will solve the pain issues, and put me farther on my way to full health, I'm all for it. After all, eight years ago, if someone had told me I'd give up all grains, all potatoes, all sugar, all starch, beer, and ghu help me, CHOCOLATE, I'd've said they were nuts. But here I am... SCD and loving it.
