So Marilyn... What exactly does ostrich meat taste like? Is it a

dark meat? We are looking for some new " meat " choices, as red meat

and pork really upset our son's GI system. We tried turkey burgers

last night (and I would consider myself to like turkey), but I

thought it tasted pretty gross...not sure why. It was just salted

and peppered and broiled. Anyway, getting pretty tired of chicken,

and looking for alternatives! So, would love to hear more about

ostrich... :-)

Ostrich is a red meat, despite being from a bird. They use the thigh and

leg meat primarily. It has a flavor akin to high-quality veal (which I

have not used since learning about the cruelty associated with veal

production).

It's not cheap, but it is delicious.

They do have a minimum weight order which allows them to ship 3 day FedEx

to most parts of the country, which makes for a significant savings on

freight. <g> Having the Dachshund Duo, I was able to order some of

their ground ostrich for pets and ground bison for pets (which is cheap

because it's not the most desirable part of the bird), along with some

recreational bones to pad out my order. They put the dog food around the

outside, and our food on the inside, and packed it so well that there was

virtually no detectable defrosting, even on the dog food and none

at all on the food inside. I don't know that I'd want to order in high

summer, though.

I want to try the ground ostrich -- like you, I find ground turkey

somewhat lacking in flavor. (Although I normally prefer white meat from

both turkey and chicken, I find that dark meat ground turkey tastes

better.) As much as I love bison, sometimes I want to try a different

flavor of meat!

I fixed the ostrich steaks with just a little black pepper and grilled

them medium rare (the way we like our red meat) and they were great.

Astoundingly filling, too.

One of the things to consider, if you are using even organic beef and

pork, is that although these animals may have been pasture-fed, they are

typically " finished " in the last few weeks by heavy feeding

with corn, to add fat and flavor (they claim) to the meat.

While this is not a problem for the majority of people, some very

sensitive people find that grain-fed meat is an issue for them, and that

they must seek out grass-fed and grass-finished meats, especially in the

beef and pork areas. One reason I prefer the bison is that bison CANNOT

eat grain, so MUST be grass-finished. (Many Vitamin C supplements are

also derived from corn: a friend who had corn intolerance once told me

that she'd never been able to take Vitamin C when I suggested it for a

cold. I mentioned the corn connection; she sought out non-corn derived C,

and presto -- she could tolerate it.)
