My dehydrator has a setting for herbs, that's the one I use, and just let them go until they're dry. It usually takes a couple of days but it will depend on how thick you slice them....the thinner they are, the faster they will dry. I try to shuffle the trays a couple of times during the process. I test them by mashing on them and if they're still soft or spongy, they're not ready yet. One bag is chopped and put in 1/2 cup containers or in zip top bags and goes in the freezer. Need an onion, grab a box or bag, let it defrost for a few minutes, and use. Slice the other bag very thin with a very sharp knife. Lay out on dehydrator trays or on parchment covered cake cooling racks.In the dehydrator, dry at around 135*F. until onion is dry and snaps. In the oven, heat at the lowest temperature your oven has until onion is dry and snaps.Place dried onion in blender or food processor and process until powdered.Store in a zip lock container with a food safe moisture absorbent pack Permission by Wizop Marilyn L. Alm *GARLIC POWDER (LSCDL Recipe) Buy and peel about 3 pounds of fresh garlic. When done peeling, there will about 2 pounds of fresh, peeled garlic. Put one pound goes in a large Ziplock box and goes in the freezer. Then you can pop out a couple of fingers, let them defrost for a few minutes, and then press and use. The frozen garlic presses easier, and more completely, and because the cell walls are broken by the freezing, get more flavor with out the, "zing!" that garlic sometimes has.The other pound is sliced very thin with a very sharp knife. Alm ONION POWDERSlice onion very thinly and place on parchment lined cookie sheet in singlelayer. Turn your oven to lowest possible temp. Mine goes to 170F, but thereare models that can go even lower. It takes few hours for the onion to dryout. Onion took much longer to get dry then garlic (like 7 -10 hrs). Whenthe onion crisps up, cool and grind in coffee grinder. Store in a glasscontainer with the lid in the fridge. Or use a dyhydrator.Monika mysuit@... I just keep peeling and slicing until the trays are full. I store it in the fridge in little spice containers I got from Bed, Bath and Beyond. They hold 3.7 oz. and I usually get about 3/4 of a container of garlic and about 1/2 of a container of onion. I don't know how long it will keep. I've never had any go bad.
