Again, this person's question is specific to what state of grain Elaine researched in relation to digestion. Baden, As I understand it (although I have not yet been able to obtain a copy of Dr. Haas' book to read), the majority of the research on grain was Dr. Haas, not Elaine's, although she followed up when she obtained her Master of Science in gut biology. Much of Dr. Haas' research was done, interestingly, around the time in which Weston Price was doing his research into traditional food preparation. One thing which did come out of Dr. Haas' research AND Elaine's is that celiac / IBD type disorders, exacerbated by grains, have existed for thousands of years. This would seem to argue that not even traditional preparation methods are helpful for the diseased gut. I have insufficient data to guess as to whether or not, after a person has been symptom free for at least a year, following traditional SCD, whether or not they might re-introduce grains or grain-like seeds. If they chose to do so, I suspect that the traditional methods of preparing these would certainly be helpful. I know that Elaine's daughter was able to re-introduce some non-SCD foods, but I also know that she reacted to rice, always. I also know of people who have been able to re-introduce some grains, and of people who have returned to a so-called " normal " diet. I have also heard that the younger a person is when they come to SCD, the more likely they are to be able to ultimately reintroduce non-SCD foods. I also know that I personally, have no plans to re-introduce grains, although there are some short-cuts which I am now able to use without apparently affecting my gut. (Lucy, of Lucy's Kitchen Shop, has been grain-free for 15 years.) However, until my weight has fully normalized, I will not consider myself to be symptom free. In the meantime, I made my own case to the group of all the reasons I am so happy to be grain (and pseudo-grain) free.
