Guest guest Posted September 28, 2008 Report Share Posted September 28, 2008 My upper GI dysfunctions don't tolerate spices at all, so when I make beef jerky I simply use salt and a bit of olive oil (to keep the salt in place). That's as mild a jerky rub as you can get [grin]. I believe you can adapt any marinade or rub recipes, just use SCD-legal ingredients. Usually rubs are simply dry spices, so you can combine any you like. Marinades need some wetness along with spices, and again, you can combine any you like. When I first looked into jerky making, I borrowed a few books on grilling from my local library. They all contained various recipes for both marinades and rubs. I knew my upper GI wouldn't tolerate the seasonings, but all of the recipes I saw could be easily adapted using SCD ingredients. I just ended up using salt (kosher salt works great) and really good quality beef. Tastes fine, and my upper GI tolerates it in moderation. Kim M. Leave out the red pepper flakes and cut the black pepper in half to reduce the hotness. There is some disagreement on the list on whether or not liquid smoke is legal. I use 's liquid smoke which lists only legal ingredients. I emailed the company to ask if it contains an illegals and they said it didn't and explained how it was made. However, Elaine said the proper way to get verification of a product was on company letterhead, with a signature and title. If you're uncomfortable with liquid smoke you could substitute smoked Spanish paprika or smoked onions or smoked tomatoes.
