Coconut Flour

Hi Everyone,

I have been experimenting with coconut flour and have found it to be

great for making muffins, pancakes and as a thickener for gravy. The

coconut flour is very fine and the pancakes come out beautifully, much

less grainy than the almond meal ones.

In Australia I buy coconut flour from www.nuilife.com

In the US there are plenty of online stores that sell coconut flour. One

thing I have noticed is that coconut flour comes in different grades of

fine-ness. The one I buy in Australia is almost like cornflour, very

fine. So I advise to ring and ask how fine the flour is before ordering.

The finer the better!

This flour is available at Akin's And Chamberlin's in

Nebraska,Kansas,Oklahoma,and Florida, and should be available from

Trader Joe's and Whole Foods as well. They can be mail ordered from

these places, as well as available on their web sites
