New to the Diet - What I Eat

The first thing I realized was I got out of pain!

The second thing I realized is that green beans, carrots, etc.

actually taste sweet and when seasoned well and cooked down they do

not sour my stomach. Also, I am getting use to the taste and it's

not so much that the food taste like hospital food but that it's not

processed with tons of preservatives and sugar. I am addicted to

carbs and sugar!

I'm not a cook but I am starting to learn. I finally don't feel like

I am starving and in the last week I have regained clarity of

thought! I have made sure that I have lots of melons, grapes,

avacado, etc. The C has eased up and although I'm not having complete

nomal B.M.s, my bowels are moving, there is no blood and I am not

stopped up and stopped breaking out.

I am getting ready to make some batches of zuch and carrot muffins,

peanut butter cookies, almond roca and other SCD friendly " junk

food " . Lucy's husband told me be careful and not go overboard even

though these snacks are legal! I am going to freeze some goodies so

when I am watching T.V. I have legal snacks. I cleaned out everything

illegal so I cannot cheat! Whenever I did cheat, the pain lasted

days! And it is not worth it! The banana pancakes with honey were so

easy and good my xMIL is eating what I am eating and loves it!

I am pretty sure I can manage now in just a room with some

modifications. I will be allowed to bake goodies at xMIL's house and

the fruit and veggies will be bought fresh weekly!

I almost wish it was not called a diet but rather different food

choices. Everyone groans, " Diet! " It's just taken a couple of

months of manipulation with the food choices. But I am having an

excellent cup of coffee with a little honey and coconut milk.

HEAVEN!

It was a rough start but I'm getting better at cooking, snacking and

food choices! Finally after 10 months I have relief!
