Guest guest Posted August 24, 2008 Report Share Posted August 24, 2008 Hi Sharon. I recently noticed that Lyosan recommends storing its freeze-dried yogurt bacteria cultures for 2 years. That suggests to me that the bacteria are still viable when frozen. I guess the next question would be for how long the bacteria in the frozen yogurt are viable. At least in the frozen yogurt recipe I use, they can probably feed on the honey. I think I have read that the bacteria in refrigerated yogurt are viable for only a few weeks. But then, what are they able to feed on once they have converted all the lactose? When I make frozen yogurt, using 2 cups whole milk yogurt, 1 cup of berries or other fruit, and 2/3 cup of pasteurized honey, it gets consumed in less than 1 week. Perhaps somebody with more knowledge about frozen yogurt and refrigerated yogurt can provide definitive answers. I seem to recall having read a message on this list suggesting that frozen yogurt would allow a person to test whether an intolerance to SCD yogurt was the result of intolerances to the bacteria or to the milk proteins. But I am not convinced that this is the case. Perhaps a better test would be to bake the yogurt and kill off the bacteria with heat, in order to determine whether the intolerance is to milk proteins. I am reasonably certain that the SCD cheesecake, made with 1/2 cup SCD yogurt, contains no living acidophilus.
