(Yah, yah, like you didn't know this already!) First: Don't Panic. Second, Don't Panic Third, DON'T PANIC and Fourth, Do you know where your towel is? (to quote in The Hitchhikers Guide to the Galaxy) >> HOW THE HELL IS A COLLEGE STUDENT SUPPOSED TO DO THIS DIET!!! << The same way a non-college student does it! The same way I did it in Hurricane Katrina-shattered New Orleans, with a Foreman grill, a crock pot, a yogurt maker, and a 4.2 cubic foot dorm fridge! You know SCD works, so you have absolutely every reason to know that the effort you're going to put into this will work. (And believe me, lady, unless it's essential, you don't want surgery -- I had cancer surgery in April, and I'm still exhausted all the time. Surgery would really put a crimp in your college year. As one of my specialists said, " I am very fond of Dr. C, but she's a surgeon. Surgeons believe that at six weeks after the surgery, you can go back to a normal life, when in point of fact, it can take a year to 18 months to recover. " Does your grandma have a big freezer? You could go and use her kitchen to make things like cheese and bacon (or just cheese) mini quiches, or beef and broccoli quiches or chicken and spinach quiches and bring back a week's supply at a time. How large is the freezer you have? Is it the one in the dorm fridge? Or is it a separate freezer? This will make all the difference in the world as to what advice we can give you. Do you have your yogurt maker, and the ability to pasteurize milk? BTW, pizza and ice cream are do-able on SCD, though possibly not with your current set-up. Don't bother with the hot plate, unless you're planning to fry eggs, or something. If you get the right Foreman grill, it can have flat plates that you can fry eggs or pancakes on. Not to mention use to make flat breads. You need a full size crock pot to cook roasts, chickens, and other stuff. A toaster oven (check to be sure it isn't rated electrically any higher than the legal microwave) is real handy, too, for make small batches of muffins, quiches, etc. What are your immediate needs? Grab-n-Go breakfasts and lunches and snacks, right? What foods do you like / tolerate? You can pierce a squash or slice it in half and pop it in the microwave. Delicata squash are small, cook in 5 or 6 minutes and I just eat it plain; it is so good. Also cook an acorn squash, then mix it with butter and lots of cumin. KarlaSCD 9 mos AHHHHHHHHH!!! So first off, let me just say " What a freaking nightmare this has been!! " So I was diagnosed with UC a year ago (I'm 18 now). And, just a little back story, I've mostly care for myself since I was 16 with the help of a LOT of supportive friends who basically treat me like family and a grandma who helped as much as possible in spite of living an hours drive away. I started the SCD this summer and had miraculous results! I was in a SEVERE flare up and even though, for IBD patients, the book says don't expect much result for 3 months, I was internal bleeding free, pain free, sleeping at night again(!!!), and my stools were somewhat formed...all in THREE WEEKS! I hadn't had ANY of that (except occasional stops in bleeding, only after steroids.) since BEFORE this whole thing started. Obviously the diet was exactly what I needed. I even found out that I could get away with little screw ups, because my body responded SO well. It was a pain of course to now cook EVERY LITTLE THING I ingest. Not to mention having to pack snack bags in my purse just to go hang with friends, but it wasn't too bad altogether. It just required a lot of will power while my buddies are enjoying pizza and ice cream and I munch on lame trail mix and juice. Now it's a different story though. I was doing so well, that I was sure I would be able to handle it in college...I'm sure you know where I'm going with this.. HOW THE HELL IS A COLLEGE STUDENT SUPPOSED TO DO THIS DIET!!! I ended up completely deviating away from the diet for convenience and it only took 2 short weeks before the flare came back. I'm finally stable again after a month and meds for the quick fix. I need as many ideas on food as I can get. PLEASE HELP ME! I'm working with a decent amount, because I got a special setup for my medical issues, so I have a fridge and freezer and microwave...Also, I have a few totally illegal items...but as long as my RA doesn't see them, I'm in the clear. So between us, I have a Forman and mini croc pot that basically will just boil some water. I'm thinking about bringing in an illegal hot plate as well, so lets assume I have that too. Now! I need your ideas on what I can cook. This is so hard and I'm almost giving up...my only other options are to attempt that Lupus patient medicine, some crazy injection drug my doctor mentioned (unless that IS the Lupus stuff), or the surgery. Nothing else has worked. Nothing. I really don't want to get crazy surgery at age 18, but if I don't make this diet work, it's looking like that may be what happens since my body is SO non responsive to every med so far. So yeah. But she's had anxiety and panic which I think is a result of her GI tract being messed up. So she hasn't been to school yet this school year. The nutritionist found bacterial overgrowth in her intestine and this diet is supposed to help. We are only almost 3 weeks into it. Enough of my story. I just wanted to give you a background of what's happening on my end. But the reason for this email back to you is to encourage you to do whatever it takes to stick with it. especially since you saw such great results in 3 weeks. Just keep trying to remember that. It's hard enough for me to cook for her and the rest of my family. I can't imagine how hard it must be for you. You sound like a strong person. Just keep at it. And just do the basics for now. I do hamburgers, pork chops, salads, chicken for my daughter a lot. And eat the tons of fruits and veggies, as snacks and something sweet. I'm sure you know all of this. Just keep plugging away at it. I've needed encouragement through all of this too. And I'm praying we're on the right track to get my daughter better. I'll try to remember to pray for you too. You can make jerky and fruit and fruit rollups and tons of snacks. My daughter's DC had made to order chicken breast and salad. I put lemon on salad when I'm dining out without dressing in my purse (it's actually pretty good). Homemade salsa. I also carry lemon juice that I can add to a glass of water and a packet of sweet-n-low. There's a new minute maid 100% lemon juice in the freezer section by the frozen juices- 7 lemons in a squirtable purse size container for $2. There's always omelets and eggs. What city are you in? Next, I have my own freezer and you could fit about a standard size microwave in it. Not huge, but definitely sufficient. Currently it is half filled with frozen fruits and veggies. I was sure to work with disabilities before move in to get a special set up. My own room with its own bathroom (A MUST!) So have space for the extensive amount of cooking supplies and food that I have to have at all times! Also, I told them that Caf food was NOT gonna happen. Usually it's a requirement for students, but it got waived for me. Finally, I don't have a yoghurt maker, but I'm asking for one for Christmas! My biggest concern is the need for easy breakfast and lunch, because I have very little time to prepare in the morning or between class at lunch. Mornings need to be 10 minutes or less including the eating. and for lunch I have a little less than an hour and a half. I can spend time on dinner though! Also, I have some cookbooks, and the recipes look great, and I understand I'm just going to be spending more money on food than most, but I can't afford a lot of the things needed for those crazy recipes. I have basic spices (salt, pepper, cinnamon, paprika, onion, parsley and oregano.) LOVE fish...but that's pricey too and I always cook it wrong. ::sad face:: I can't go buy the expensive stuff. Good news is, I tolerate just about everything if I chew it really good. Chewing makes a HUGE difference for me (is that odd?). Too much egg is a problem right now, but isn't when I'm doing better. I can tolerate one a day right now. Thank you so much! The response I received in one day is just amazing. Obviously I get down sometimes and just need a little bump in the right direction. The hardest part for me is probably all of the temptation. I go to school in NYC and the walk between my dorm and the class building can be brutal! haha. I need some horse blinders. There's SOO much good food everywhere! I almost broke down and bought an empanada for lunch today, but I have to remind myself that no amount of tastiness is worth the pain it causes. If I go to my family in CT for the weekend, I'm surrounded by people who care, but are just simply clueless about how to feed me. haha. My grandpa, I love him dearly...It makes me laugh just remembering. He always forgets about my diet, and offered me half his sandwich the other day. I told him I couldn't and then he goes on about how surprisingly delicious the bread was! hahaha. I had to remind him that I'm not on the diet because I dislike bread, and that he was not making my life easier by describing the bread.. All said while chuckling of course. Just thought I'd share for fun, cuz it's just one of those times that really made me laugh. Yeah...random tangent... By the way, I really hope this diet works wonders for your daughter like it did for me and SO many others!! Also, I just feel like I want to thank you myself for participating (even if it's only sometimes) in the diet with her! I think it would be 10 times easier if I had even one family member or friend who would participate just when I'm around. Ya know. It just gets hard to watch everyone around you always eating whatever they want. At least at home, your daughter can feel like she didn't have to substitute or exchange parts of a meal, because someone will be eating the exact same thing as her. Obviously I get down sometimes and just need a little bump in the right direction. The hardest part for me is probably all of the temptation. I go to school in NYC and the walk between my dorm and the class building can be brutal! haha. I need some horse blinders. There's SOO much good food everywhere! I almost broke down and bought an empanada for lunch today, but I have to remind myself that no amount of tastiness is worth the pain it causes. If I go to my family in CT for the weekend, I'm surrounded by people who care, but are just simply clueless about how to feed me. haha. My grandpa, I love him dearly...It makes me laugh just remembering. He always forgets about my diet, and offered me half his sandwich the other day. I told him I couldn't and then he goes on about how surprisingly delicious the bread was! hahaha. I had to remind him that I'm not on the diet because I dislike bread, and that he was not making my life easier by describing the bread.. All said while chuckling of course. Just thought I'd share for fun, cuz it's just one of those times that really made me laugh. Yeah...random tangent... By the way, I really hope this diet works wonders for your daughter like it did for me and SO many others!! Also, I just feel like I want to thank you myself for participating (even if it's only sometimes) in the diet with her! I think it would be 10 times easier if I had even one family member or friend who would participate just when I'm around. Ya know. It just gets hard to watch everyone around you always eating whatever they want. At least at home, your daughter can feel like she didn't have to substitute or exchange parts of a meal, because someone will be eating the exact same thing as her. I love squash and keep some smaller kinds around so I can quickly cook them. You can pierce a squash or slice it in half and pop it in the microwave. Delicata squash are small, cook in 5 or 6 minutes and I just eat it plain; it is so good.. Also cook an acorn squash, then mix it with butter and lots of cumin. Not to mention having to pack snack bags in my purse just to go hang with friends, but it wasn't too bad altogether. It just required a lot of will power while my buddies are enjoying pizza and ice cream and I munch on lame trail mix and juice. Now it's a different story though.I was doing so well, that I was sure I would be able to handle it in college...I' m sure you know where I'm going with this..HOW THE HELL IS A COLLEGE STUDENT SUPPOSED TO DO THIS DIET!!!I ended up completely deviating away from the diet for convenience and it only took 2 short weeks before the flare came back. I'm finally stable again after a month and meds for the quick fix. I need as many ideas on food as I can get. PLEASE HELP ME! I'm working with a decent amount, because I got a special setup for my medical issues, so I have a fridge and freezer and microwave... Also, I have a few totally illegal items...but as long as my RA doesn't see them, I'm in the clear. So between us, I have a Forman and mini croc pot that basically will just boil some water. I'm thinking about bringing in an illegal hot plate as well, so lets assume I have that too. Now! I need your ideas on what I can cook. This is so hard and I'm almost giving up...my only other options are to attempt that Lupus patient medicine, some crazy injection drug my doctor mentioned (unless that IS the Lupus stuff), or the surgery. Nothing else has worked. Nothing. I really don't want to get crazy surgery at age 18, but if I don't make this diet work, it's looking like that may be what happens since my body is SO non responsive to every med so far.So yeah. I apologize for the crazy long post and thank anyone who made it to the end. Please leave ideas. Anything! I can't tell you how thankful I am for SCD support groups. Again, Please help me. I recommend a toaster oven -- you can still make toast, but you can also warm single servings ieasily, and cook small amounts of muffins and breads in it if you don't feel like sclepping over to a big kitchen. I don't ordinarily recommend food cooked by anyone else, but they have a " Naked Chicken, " ie, chicken cooked with no seasoning whatsoever which I have tried, and found works very nicely when I am on the run. With the crock pot, you can toss a largish roast in the night before, along with some salt and pepper, and crock it for around 24 hours. It will fall apart. Look through the archives for my Cheese and Bacon Mini-Quiches. These can be made in smaller batches, and they're delicious without the bacon if you don't have time for bacon. They freeze well, and reheat in the microwave or toaster oven while you're getting dressed in the morning. It's also possible to do things like beef and broccoli or chicken and spinach quiches, which can work just great for lunches if you happen to be out of the above mentioned chicken or beef salad. Get yourself a small cheap suitcase with wheels to put food and utensils in and then wheel it down to the kitchen when you're doing preparations. Then wash up, put finished food in the case, and your various tools, wheel it back to your room, and put the food in the fridge. What you aren't eating of it right then, that is. Think of it this way (I'm talking to myself as well as to you to encourage me too) - it's only food. If eating meats, veggies and fruits will get you better and not have surgery and /or meds, then you have to do it. You will be stronger in the end. - with stronger willpower, etc. I'm the mom who has the 13 year old on the SCD. Just keep thinking it's only food. and as one person wrote on here recently - I used to live to eat. Now I eat to live. And things can still be tasty. It's not like this diet is making us eat a shake of pureed brocolli every meal. Like I said, I'm writing this to encourage myself too. I've been very weary and depressed lately. Mostly because of my daughter's anxiety and her not in school because of it. Anyway, I just wanted to encourage you once again.
