Guest guest Posted October 10, 2008 Report Share Posted October 10, 2008 2 egg whites 1 cup honey 1 t cider vinegar or cream of tartar put in stainless bowl over a pan of water that is boiling. with a hand mixer beat for about 7 min. until stiff peaks form. this is like marshmallow fluff and delicious. you can add vanilla if you have somethat is legal. i'd love your cake recipe if you don't mind sharing. I'm going to layer two of them with a raspberry filling (I'll probably adapt the Raspberry Coulis recipe that came with it...) Finely ground Almond flour made from 3/4 cup blanched almonds (don't really know how much it converts to using pre-ground almond flour, but you really can't mess this up...) Veg oil spray 1/4 cup honey (or a little sweeter depends on how you like it -- the orig recipe called for 1/2 cup sugar) 4 lg eggs, separated 1 tsp almond extract 1/4 tsp salt 1. Pre-heat oven to 375 degrees. 2. With veg oil spray, lightly coat inside of a 10 in pan with removable rim or any other 2 qt baking dish with sides at least 2 inches high. 3. In a lg bowl, whisk egg yolks with honey for several minutes until it is lighter in color and thick. Gently stir in ground almonds and almond extract. Set aside. 4. In a lg clean bowl, beat together egg whites and salt until firm peaks form. Stir 1/3 of the egg whites into yolk-almond mixture to combine thoroughly, then gently fold in remaining whites. 5. Pour batter into prepared baking dish and bake until set and golden brown on top, about 20-25 min (the orig recipe called for 30 min, but that's too much) Let cool at least 15 min. Top with raspberry coulis. Raspberry Coulis: 2 cups fresh or frozen raspberries About 1/4 cup honey (again, the orig recipe called for 1/2 cup sugar) About 1 tbsp. lemon juice 1. In med saucepan over med-high heat, bring raspberries and honey to boil. Reduce heat and simmer, stirring occasionally, until mixture starts to thicken, about 15 min 2. Press mixture through fine meshed strainer, using spatula to extract as much liquid as possible. Discard seeds. Stir in lemon juice, taste and add more honey or lemon juice if you like. (I plan on using something to thicken this sauce so it will be more of a filling for the two layers of cake...possibly coconut butter and/or coconut flour.) Or you can buy an oil sprayer at Bed, Bath and Beyond. I'm sure you can get them at other kitchen shops too. They're inexpensive. Amazon.com has several. Just search for oil sprayer.
