I also do asparagus from time to time, which, btw, I have never peeled -- I just break off the tough end parts and toss them into a mixed veggie freezer bag which gets used one of two ways -- to make vegetable stock, or, more likely, to get thrown in with other vegetables that I am grinding for the fur children. Peeled asparagus is lovely, but peeling and seeding tomatoes for sauce drives me crazy enough.
