It was Salmon salsa- basically flaked salmon, tomatoes, red onion, cilantro, salt, pepper and lemon juice. Add peppers? I haven't checked to see if peppers are SCD legal but regardless- It'd be so good on crackers! The hostess served it with thin Triscuits of which I did not partake..... You have stumbled onto my favorite way to sneek onega-3's into my familys' diet. Peppers are legal, and I make Chipotle Mayo with sun dried tomatoes and Chipotles (smoke these yourself if you have a grill/smoker) and keep it in the fridge always. If you add this to some homemade smoked salmon, any legal cooked salmon really, it is awesome on any crackers, bread, in a tomato or avacado half. It is also wonderful... food for the gods if you top grilled salmon or chicken brest with this mayo,after turning the first time in the mean time sauteing or grilling up some zucchini to serve under it.
