heating milk for yogurt

In order to keep a pot from burning when heating milk, one

should put cold water in first, pour out, then pour in the milk. I

tried it a couple of days ago and darned if it didn't work......FOR

SURE! I'd put 2% milk and 1/2 and 1/2 on to heat for yogurt and just

forgot about it. Fortunately I was still in the kitchen when it boiled

over!!! I figured I'd ruined it....but it didn't smell, so I went

ahead and poured it into another pot. And was so surprised to see that

the bottom of the pot had barely anything on it....just some white milk

solids. I hadn't stirred it at all! Can you believe it? I couldn't!!
