Hi Jodi, I have a $50 Nesco American Harvest dehydrator. I live in Las Vegas. After going to 6 stores I finally found this one (2 weeks ago) at Bed Bath and Beyond. More stores may start carrying them closer to the holidays. Everyone else was an online order situation and I needed that instant gratification NOW dehydrator. It works fine. It only has 4 trays but you can add more. I would have bought Excalibur- cuz I like the best- had it been sold locally but now that I have a $50 one instead of the $200 guy, I'm content and I use it a lot more than I thought I would. We keep trying jerky recipes to give to everyone as holiday gifts. I was yelled at tonight at soccer for not bring apples and jerky. That may be the biggest problem with any dehydrator- the friends!

The question is more, what CAN'T you do with them!

I make yogurt.

I dry apple and pineapple and berries.

I dry zucchinis for substitute pasta.

I dry other veggies for all sorts of things.

I make snacking meat sticks.

I dry crackers.

I dry cheese crisps.

I defrost meat.

Oh, and I've been known to use them to dry my swim weights or a

sweater... but I don't think the manufacturer really intended them to be

used for that.

I bought the second one after I realized the first one was always full

and I didn't have any time to make yogurt....

Jodi,

It could simply be that Lucy hasn't changed the picture on her web site.

My basic understanding (but check with Lucy: she's the one who sells them

and should know what Excalibur is offering!) is that the difference

between the 2900 and the 3900 is simply and solely the timer.

Never having used one with a timer, I can't begin to guess its myriad

possible uses. Just let me build my kitchen and library with some living

space attached, though, and I'll be happy to take a stab at it.

I seriously debated about spending the $$ on such an expensive unit, but

I have used them so darned much over the years that they have paid for

themselves a hundred times over. (My mother isn't even ON the diet, and

she has my Dad buying cases of pineapple for me to dehydrate so she can

munch on it. So be warned... once your family finds out some of the

goodies you can make, you may be doomed!)

perfectly serious!

I make yogurt in my dehydrator also. Just heat the milk to above

180 degrees, cool it to below 100 degrees, dissolve some yogurt

starter in the cooled milk, add rest of the milk, and put the ypgurt

container in the dehydrator, set to 105 degrees. Leave it for 24

hours. The yogurt makers just heat the container by keeping the

water around the container heated. The dehydrator keeps the air

around the yogurt heated. For me, the dehydrator is easier because

the temperature is easier to set and it stays stable.

As soon as I can figure out where and to whom to send a letter, I'm

see what I can find out about the " new and improved " Dole pineapple

in 100% juice. It is a major pain slicing fresh pineapple. Way too

much work to dehydrate the fresh stuff, and then to realize it's too

advanced for my son, and be forced to eat it myself.

If I ask Dole to send a letter stating " no sugars, binders, fillers,

preservatives have been added, " does that cover everything? Is

there anything else I need to ask to ensure it's SCD compliant?
