I added honey to espresso. Not too sweet but it just cut the harshness of black coffee.

I also had to add about 2 1/2 tbsp honey to makethe new flavors work. I normally drink black, weak coffee, but this"experiment" certainly is not worth all the extra effort excessivefat. Any other suggestions or successes?

add honey and vanilla or almond extract. also maybe your coconut milk is not rich enough as I have had success with farless than that in coffee, Are you blending it together for several minutes in a two to 3 ratio?At one point, initially, when I was transitioning, I used a few drops of hazelnut oil as well - which, with the vanilla and added extract, was kind of a mock frangelica taste in the coffee. Although from you comments you may not like the "oil." I didn't mindit because I figured, like half and half, it was a fat, so it didn't bug me. Giving up milk in coffee was one of the hardest things for me about starting thisdiet. Although now I am used to black plain coffee, and onlyadd in honey occasionally and rarely anything else. Although, when I visualcoffee, it still is coffee with milk. MaraI added honey to espresso. either honey or saccarin (sp?) with homemade vanilla extract is a nice treat from time to time.

i personally didn't like the way coconut or almond milk tasted in my coffee.

I go to a local coffee shop where they grind the flavored coffees right there. I usually order French vanilla, she grinds the vanilla beans in with the coffee beans, heavenly scent. I also like the Cumin ground in fresh. She does all flavors. In the summer she had some dried lemon ground in and some orange. She showed me how she did it. She pours the coffee beans into a large steel tub and mixed in the vanilla beans or whatever she was flavoring with and left them for a couple of days to season, nothing else is added, then she grinds them. It would be easy to do at home and you could put in what you like and know there was nothing illegal added. Hope this helps, it's a great taste treat.

I make egg milk to add to my coffee and it almost tastes like real

milk in the coffee! I just process a couple of eggs with a few

tablespoons of melted butter and then add some water. I put it in the

mug before the coffee and then add coffee and boiled water. Sometimes

it splits a bit but even then tastes good. I've done it with tastless

coconut oil too. Give it a try.

When I just read the egg milk suggestion, I have to say that I was

skeptical and curious at the same time! I just tried it and am very

impressed! Something that I love and will miss dearly is Lattes and

specialty coffee drinks (eggnog lattes around the holidays, sniff).

When I tasted the egg milk coffee, I realized that this could be my

latte! I put vanilla extract in it and it was good! Thank you for

the suggestion! Now I don't feel so deprived!

I just wish I could drink coffee! I would even drink it black....I would drink anyway if I could ...I really miss coffee and bread and the ability to tolerate lettuce....: (

Have you tried coffee diluted?

Have you tried souffle bread?

And... well, I can't help ya with the lettuce until you can tolerate raw

vegetables -- which took me WAY longer than I liked, fer shure!

Have you tried " boiling " your lettuce? I make sallads and pour boiling hot

broth over and stir. It makes the lettuce soft and more digestable without

making it go too limp. (I save the fat and juices from when I do chicken in

the oven to use for quick broths.)

I long for things too. What I want to eat is roasted parsnips and boiled

beets with salt and butter. I also miss fresh fruit (I can only do

cooked). I also miss just eating without thinking about what I am eating....

Well, beets are somewhat advanced, but are doable once you have healed.

Parsnips might be a non-SCD food for you to try when you are more healed.

(Did you know celeriac makes a darn good potato substitute?)

Fresh fruit will be yours again when you are more healed. I admit, I

thought that one was going to drive me crazy, because for the longest

while, I had trouble even with cooked fruit. But now.... ah!

And the eating without thinking, that becomes ingrained, and you no

longer have to think about legal or illegal. You just KNOW.

And the advantage of the healing is one thing you WON'T miss:

sharp-spotting every lavatory within sprinting distance when you go

anywhere!

I grind up a snippet of a vanilla bean in with my coffee grounds. It

gives it a nice flavor. If you do not grind your own beans, then you

could cut up pieces of vanilla bean and put in the coffee grounds. My

favorite coffee used to be hazlenut. I have yet to successfully

replicate it.(sigh)

I have not tried diluted coffee in a while, I think b/c it just changed how it tasted so I was not as thrilled with it and it was not as worth it to still have a loose stool over weak coffee, although I am not sure that if I stuck with that it would eventually work out ..not sure about that, and yes I do use the souffle bread....it just holds nothing next to a bagel or a nice piece of crusty Italian bread....just venting.......and wishing......however I do feel better which is normally what happens after you feel better...you start wishing for other food but when I was really sick it was easy to stay away from it!!

<g> Much to my good fortune, I'm not a coffee drinker (my husband's

allergic to it, if you can believe that!), but I can sympathise because

weak tea is not where it's at for me, either. It was easier to drink

plain water in the early stages.

What I could lust after is French Bread, but I have some thoughts on that

and when I get a chance to experiment, I'm going to see what I can come

up with.

I will admit that there was a period, during the just-after-Katrina, when

it would have been SO easy to cheat. But things were just so crazy, and I

did not have time to get sick.

So I held fast. And you know, my recent experiences with the prescription

meds and the illegals often used in making them have made me understand

even more how necessary it is not to cheat. Once you are fully healed,

you can consider adding non-SCD foods back in -- but I am not yet fully

healed, as I have another 100 pounds to lose.

No food, however luscious, is worth what I went through for 25

years!

OH you are so so sooooo right....but I still crave things, won't do it after my last time I cheated and was sick for awhile and not worth the few minutes of pleasure!

Hi!

I tried cold brewed coffee this morning. My daughter found the recipe

on the " Smitten Kitchen " blog which has a recipe from the NYTimes.

The recipe calls for diluting coffee concentrate with equal amount of

water, but I diluted 1 part coffee to 2 parts water and it was still

good and drinkable without cream. I added a couple of teaspoons of

honey and it tasted great. Low acid with full taste.

Someone else wrote a while back about using Italian Chestnut Honey in

coffee which sounds divine, but I haven't tried yet.

Isn't there supposed to be a way to use heavy cream if you add drops

that eliminate the lactose in the cream? I haven't been able to find

the reference. Just remembered reading long time ago. Maybe someone

else will know.

Yes. Lact-Aid has discontinued their drops in the US (they are, I think,

still available in Canada, but I'm not sure where else). However, if you

do a search on Lacteeze, you can find the drops. Here is one site (I have

not purchased from them) which carries them.

Note that full cream treated this way is NOT to be used as a beverage --

only small amounts as for a coffee or tea creamer. (I have NO idea how

treated cream would whip up for a whipped topping: full fat yogurt does

really well, so I've never bothered.)

You could try this:

Cashew Milk

1 cup (raw) cashews, soaked overnight

4 cups water

1 tablespoon honey

pinch celtic sea salt

1. Discard soaking water and rinse cashews thoroughly until water runs

clear

2. Place cashews, (4 cups fresh) water, honey and salt in blender

3. Process on high speed 20-30 seconds

4. Store in glass mason jar in refrigerator

I modified it from a recipe found here:

She also has a really good grain-free granola recipe as well. Her

recipes are all grain-free but not necessarily SCD-legal...
