Guest guest Posted October 24, 2008 Report Share Posted October 24, 2008 add honey and vanilla or almond extract. also maybe your coconut milk is not rich enough as I have had success with farless than that in coffee, Are you blending it together for several minutes in a two to 3 ratio?At one point, initially, when I was transitioning, I used a few drops of hazelnut oil as well - which, with the vanilla and added extract, was kind of a mock frangelica taste in the coffee. Although from you comments you may not like the "oil." I didn't mindit because I figured, like half and half, it was a fat, so it didn't bug me. Giving up milk in coffee was one of the hardest things for me about starting thisdiet. Although now I am used to black plain coffee, and onlyadd in honey occasionally and rarely anything else. I usually order French vanilla, she grinds the vanilla beans in with the coffee beans, heavenly scent. I also like the Cumin ground in fresh. She does all flavors. In the summer she had some dried lemon ground in and some orange. She showed me how she did it. She pours the coffee beans into a large steel tub and mixed in the vanilla beans or whatever she was flavoring with and left them for a couple of days to season, nothing else is added, then she grinds them. It would be easy to do at home and you could put in what you like and know there was nothing illegal added. Hope this helps, it's a great taste treat. I just process a couple of eggs with a few tablespoons of melted butter and then add some water. I put it in the mug before the coffee and then add coffee and boiled water. Sometimes it splits a bit but even then tastes good. I've done it with tastless coconut oil too. I just tried it and am very impressed! Something that I love and will miss dearly is Lattes and specialty coffee drinks (eggnog lattes around the holidays, sniff). When I tasted the egg milk coffee, I realized that this could be my latte! I put vanilla extract in it and it was good! Thank you for the suggestion! Now I don't feel so deprived! I make sallads and pour boiling hot broth over and stir. It makes the lettuce soft and more digestable without making it go too limp. (I save the fat and juices from when I do chicken in the oven to use for quick broths.) I long for things too. What I want to eat is roasted parsnips and boiled beets with salt and butter. I also miss fresh fruit (I can only do cooked). I also miss just eating without thinking about what I am eating.... Well, beets are somewhat advanced, but are doable once you have healed. Parsnips might be a non-SCD food for you to try when you are more healed. (Did you know celeriac makes a darn good potato substitute?) Fresh fruit will be yours again when you are more healed. I admit, I thought that one was going to drive me crazy, because for the longest while, I had trouble even with cooked fruit. But now.... ah! And the eating without thinking, that becomes ingrained, and you no longer have to think about legal or illegal. You just KNOW. If you do not grind your own beans, then you could cut up pieces of vanilla bean and put in the coffee grounds. My favorite coffee used to be hazlenut. Guest guest Posted October 27, 2008 Report Share Posted October 27, 2008 Hi Marilyn I have not tried diluted coffee in a while, I think b/c it just changed how it tasted so I was not as thrilled with it and it was not as worth it to still have a loose stool over weak coffee, although I am not sure that if I stuck with that it would eventually work out ..not sure about that, and yes I do use the souffle bread....it just holds nothing next to a bagel or a nice piece of crusty Italian bread....just venting.......and wishing......however I do feel better which is normally what happens after you feel better...you start wishing for other food but when I was really sick it was easy to stay away from it!! I will admit that there was a period, during the just-after-Katrina, when it would have been SO easy to cheat. But things were just so crazy, and I did not have time to get sick. So I held fast. And you know, my recent experiences with the prescription meds and the illegals often used in making them have made me understand even more how necessary it is not to cheat. Once you are fully healed, you can consider adding non-SCD foods back in -- but I am not yet fully healed, as I have another 100 pounds to lose. My daughter found the recipe on the " Smitten Kitchen " blog which has a recipe from the NYTimes. The recipe calls for diluting coffee concentrate with equal amount of water, but I diluted 1 part coffee to 2 parts water and it was still good and drinkable without cream. I added a couple of teaspoons of honey and it tasted great. Isn't there supposed to be a way to use heavy cream if you add drops that eliminate the lactose in the cream? I haven't been able to find the reference. Just remembered reading long time ago. Lact-Aid has discontinued their drops in the US (they are, I think, still available in Canada, but I'm not sure where else). However, if you do a search on Lacteeze, you can find the drops. Here is one site (I have not purchased from them) which carries them. http://www.digestmilk.com/lacteeze.html Note that full cream treated this way is NOT to be used as a beverage -- only small amounts as for a coffee or tea creamer. Discard soaking water and rinse cashews thoroughly until water runs clear 2. Place cashews, (4 cups fresh) water, honey and salt in blender 3. Process on high speed 20-30 seconds 4.
