In response to my questions, they e-mailed me saying, " We add no starch or binders. We add nothing. We dry with warm air and put the dried nuts through the grinder " and " We dry roast our pecans, so there is no added oil - only air! Some producers also add sugar to nut butters, but we add nothing. " Great, I thought. I asked them to send me a letter, confirming what they said in e-mail. First they told me to print out the e-mail, then they cancelled my order, saying " Due to the continued uncertainty surrounding our product and your son's health, we have decided to cancel the order. " This is their site: http://www.valleynut.com/ I really would like to find a source of pecan butter I can buy. So far, they're the only place I've found, and their prices seemed reasonable. What do you guys think? Can I trust them? Do you think they're just to lazy to mail a letter?
