I use the screen heat diffuser like someone else said, it works great. Just today I forgot the milk and it went to 220 and boiled and didn't burn. I have a gas range.

No way--it can still burn even using a double boiler?! Shoot. I can cross that one off my "want to acquire" list....

I haven't found the cold water trick to be as helpful as you found it, but that's pretty cool that it didn't burn after you left it on high!

No, the milk doesn't burn. But sometimes I end up with little white

sticky dots on the bottom of the pan. They come out easily enough with a

bit of soaking and a good scrubber, but it's just a bit annoying.

<g> For all I know, it could have something to do with the way my

husband washes the darn thing.

Hi Ellen, It's a round screen like device that you put directly on the burner. It looks like the grease non-splatter thing you put on top of the frying pan when you're frying. It's a heavier type screen though. Very cheap, may be able to find it in dollar stores or someplace like Walmart or Target.

Can you explain a little more what a screen heat diffuser is? I've read all the messages on this topic and I can't seem to find it.
