Mara,

Many different theories about what microwaves do to our food- although

much simpler to understand than say GMO's it's one of those things

that we still don't know enough about. Perhaps this has to to with

the paradigms we work with..

With that said recently I read somewhere in some archive that Elaine

said she theorized the issue with the microwave would be gene

mutation. This is particularly interesting to me as years ago I saw a

doctor that explained to me about the worries of eating foods that

genes have been mutated since it then merges and has an effect on our

own genes (everything we consume, breathe does etc)

We're now being told that in order to kill the bacteria on our kitchen

sponges/dishcloths, to microwave them for 3 minutes...if it kills

germs, won't it kill nutrients? I haven't used a microwave for years.

Like everything else we do to prepare foods, do it the long way.

My coworkers in the health food biz all avoid foods from the microwave whenever possible. Most are concerned that the enzymes are ruined. For the same reason we all consume as much local fresh food as we can. There are many other reasons this could be an issue, this just being the most obvious.

I avoid microwave ovens in general, but also recognize that some people

find them a necessary tool. It's like eating local and organic... it's

great if you can manage it, but not everyone can.

There are plenty of ways we can improve what we eat, from going organic

to pastured foods to non-microwaved. But let's take it one step at a

time, and not drive ourselves batty trying to do everything at

once. (Hey, for me, it's a short put, anyway!)
