I've never actually had one so I'm not sure what to even suggest to get something similar. You make honey harden by cooking it. You can cook it to hard crack stage and it will get harden. There are a lot of candy recipes on various websites where you boil honey and make a hard candy. Check http://www.scdrecipe.com/recipes/ and http://uclbs.org/recipes/ Both have toffee recipes. I don't know if that is anything like what is on the outside of a candied apple. Also, if you have the Grain Free Gourmet cookbook it has a recipe for Glass Candy. About a caramel recipe....there is an awesome one here, http://www.pecanbread.com/new/recipes/germancoffeecake.html It is the frosting for German Coffee Cake. I leave the nuts and coconut out. It is so good. I put it on lots of things.
