It allows you to lower the amount of power getting to your yogurt maker which keeps it from over heating. It doesn't allow for increasing it though. I'm not sure where you live, but I'm assuming with winter here, it's colder than usual in your house? Is there a warmer place in the house that you can put it? Maybe wrap a heating pad around it? From what I've read, you don't want the temp below 100*F. The bacteria just aren't very active at temps below that and won't be doing their job. So, to be safe, I'd say if you can't get the temp up a bit, best not to chance it.Yeah, I want an Excalibur too. Has anyone had success *increasing* the temp with the same tool? My yogurt's been running 6 hours now and was at 90 degrees. I wrapped a towel around it and it got up to 95. If I don't manage to get it higher, will the yogurt still be SCD-okay? Or will it need to be given to non-SCDers? On this batch, I found that (a) initially, my thermometer was not calibrated, so was initially displaying an artificially low temp, ( recalibration fixed this, and showed an excellent temp for several hours, after which it began to creep too high © the dimmer was totally successful in bringing it back down (d) at about hour 20, the temp had dipped too far back down (despite full power again) and would not come back up The store is willing to refund the Yogourmet, so I'm going to trade in that, the $25 dimmer, and the heating pad I would otherwise have purchased toward an Excalibur!
