I would love too -- I have a couple of other friends on Long

Unfortunately, thanks to dear old Hurricane Gustav taking five extra days

of Harry's vacation time, we don't have time for any detours.

I was actually thinking that it would be fun to get together since we

were going to be up there, and meet in person. But, not this

time!

I just got back from an 18 hour drive. I brought peanut butter cookies made from honey, natural peanut butter, and pork rinds (who would of thought pork rinds could taste good?) that I learned how to make from this list serve. I fried up a whole package of non-sugar cured bacon I found at Walmart and carried it in a ziplock bag  - it didn't need to be refridgerated and lasted the whole drive (this was the highlight of the trip). i also brought a lot of fruits and bought a gel-filled tupperware container that you can freeze overnight that kept my cheese squares cold for the whole trip. I also brought a container of diluted fruit juice that stayed cold for the whole drive. Except for one cup of coffee I didn't have to buy a singe thing from a gas station / convenience store. The hotel I stayed in had a fridge so this helped but most of what I brought would have been OK anyhow. It sounds crazy but even with the pork rinds and bacon this was the healthiest road trip I've ever taken. Pre-SCD I really ate a lot of bad stuff on these road trips.HarveyCrohns 12 yearsMed freeSCD 4 monthsMarilyn-Have a great time on your trip. Your e mail was perfect timing for me personally. My husband and I are contemplating traveling for a long weekend with the kids, but we are incredibly intimidated on how to prepare food, and what to bring, etc. We'd be staying at a hotel, no kitchen. Does anyone else have any tips?? We are will only have been SCD for about 2 months when this trip will occur, so we are still somewhat limited in our choices. Hello everyone! I am new on the list (I will post an intro shortly)

Some more pressing questions first:

I am making my third batch of yogurt in a box on a heating blanket. This morning I woke up and the thermometer read 114 F (46 C). Did the yogurt get too hot? Do I have to throw it away and start over? It had stood at around

The other thing I wonder about is the temperature. These are the different things I have read:

keep the yogurt between

90-100 F (33-43 C) from various websites

100-110 F (38-43 C) BTVC

104-113 F (40-45) the science article in a recent post here

105-109 http://www.whitemountainfoods.com/faqs.htm

This last site also had this info:

>>>> How much lactose (a sugar naturally found in milk) is left in your yogurt? According to scientific studies, yogurt cultures expend 30% of the lactose naturally found in milk. This aspect, along with the helpful benefits of the live cultures in the digestive system, make yogurt more digestible by lactose-intolerant persons. However, the study did not take into consideration variable inoculation temperatures, fermentation temperatures, and fermentation duration. We ferment our yogurt over a 24-hour period. This is much longer than the industry standard, however, if there was no remaining lactose in the yogurt, the cultures would become inactive or die, as that is their main source of energy. Typically, our yogurt has 6 grams of lactose per 1 cup serving.<<<<

When BTVC recommends 24 hours, does that mean the lactose is gone but the culture is still alive for awhile longer? I am asking because I experience stomache pain when I eat the yogurt and my liver feels all swollen and have been wondering about that. Could it be the yogurt? I think the lactose has been high in the yogurt I have made so far because the temperature has been too low (the first batches were made at around 95-100F).

thanks in advance to any answers!

best wishes

I feel I may not have enough preparation time.. As a fridge like this

would be so handy and I wouldn't be worried at all. Not this but next

week I have some testing to do and the week after that my mom is

coming into town to help me with some other testing. I feel a little

overwhelmed and unprepared to leave my kitchen. Makes me sad to

disappoint my hubby. Maybe I'll figure it out.. we shall see. He

has some bridge days he is taking off due to Jewish holidays etc. It

would be lovely to leave this concrete jungle- the noise has been

horrible!! There is so much construction on my block that I have had

a horrible headache for days.

Maybe now with you looking like a hose head (LOL) maybe the Borg

reference is apt? <wink>

I know what you mean about no food being worth it. I think for me I

have to work on different levels as well as I have an addictive

personality so food becomes a vice.. My goodness.. chocolate..

GAPS has really helped me understand so much about myself.. it's

incredible.

I hope you guys have a really good time.

Jodi,

>> You guys do the coolest stuff! :) <<

Well, just think -- you'll have things which are as neat to you as these

are to us, and you'll be doing them, too. Heck, you already are! I really

want to travel to Israel and other places (so far, Canada, the UK, and

Ireland are the only places I've hit since going SCD). I'm still trying

to figure out how to travel to places like India and China while staying

SCD.

>> Trying to find a reputable online source to buy something like

this. <<

We bought our 40 quart at Wal-Mart, of all places.

I have not purchased anything from this web site, but it looks like it

has a nice selection.

I confess to lusting after one of these:

If it's any consolation, I always feel a little overwhelmed at the amount

of cooking I end up doing right before one of these trips. When we made

our 2007 two week trip, I was lucky to be able to spend time with the

person who was my mentor in SCD, and with my SCD sister in Dayton, and so

could relax a little. Same thing when I spent four weeks in Canada in

2004 -- another SCDer invited me to spend time with them and helped by

restocking our yogurt.

It's normal -- there are a lot of parameters we have to consider when we

travel.

Actually, the mask I will have looks an awful lot like a Klingon

forehead.

Yes, SCD makes you think about every morsel you eat -- no more compulsive

eating. I already did that with my struggles with obesity, but in so many

cases I was only thinking about the calories, and not the quality of the

food.

GAPs was an interesting take on SCD.

What I've sincerely found interesting is reading my reprint of Dr. Haas'

original 1951 publication on The Management of Celiac Disease. It

has quite a bit more science in it than even BTVC which was

particularly interesting to me since I am something of a historian of the

science of medicine. I couldn't say what gives me the impression, but I

have the feeling that Dr. Haas was a very kind and compassionate man. I

also think he'd be horrified by what Big Business has done to our food

supply.

>> I hope you guys have a really good time. <<

I hope so, too! It's going to be a very hard drive -- we'd hoped to have

more time to visit people in exchange for the driving time, but ole

Gustav screwed that up for us. We'd've had nearly another whole week if

not for him. (Not, mind you, that we objected to visiting with our

friends in Atlanta, but....!)

Thanks, Grammy.

However, <evil grin> ya'll didn't get rid of me after all!

We were going to AlbaCon primarily to see our friend of 30 years, Anne

McCaffrey. Annie's been a bit frail, and we weren't sure she'd make it to

AlbaCon. (We did see her at Dragon*Con.) Regrettably, for the folks going

to AlbaCon, Anne is unable to make another trans-Atlantic trip this soon.

So, that's why we elected to drive, instead of the sensible thing, flying

into Newark and renting a car. If we drove ourselves, we could cancel

with no penalties. If we flew, we'd lose the cost of the plane

tickets.

So, instead of being somewhere in the vicinity of Birmingham, Alabama, on

I-59, I'm right here at my computer, having just come in from 2.5 hours

of water therapy. Still can't get my repetitions of my exercises beyond

30 (I was doing 80 before the surgery), but I can, and have

increased my steady swimming from a half hour to 50 minutes.
