Different squashes, pumpkins, zucchini are my friends. So are brocolli and spinach (alternating days) Besides meditating and going on intuition what is easiest to digest out of kale, chard, cauliflower? These are beautifully in-season right now and I want to stick to local, organic in-season ingredients. I make cauliflower mashed potatoes and he loves it. Whole Foods is selling locally grown gigantic heads of cauliflower right now and they are delicious. I haven tried Kale or Chard. Don't know if that helps. Jodi, Kale and chard are leafy greens, and I had trouble with those, except for spinach, chopped and cooked. I also (weirdly) still have trouble with red lettuce or red-veined salad greens. (I know, I know! Kim M is just the opposite!). They don't give me issues, per se, but they do come through completely undigested, and it can be a touch disconcerting to see last night's salad floating in the toilet bowl.... I'd be inclined to go with the cauliflower. When I was dabbling in Ayurveda (traditonal medicine from India) several years ago, I learned that of all the cabbagy and leafy type vegetables, kale is best for my " Vata " physical type. I throw away the stringy stem and rib, chop the leaves coarsely and steam it. Then I briefly saute about 1/2 tsp each of whole cumin seed (you could use powder) and coriander powder in olive oil (careful, it burns very quickly), and stir in into the kale in a bowl. I tolerate it better that broccoli or cauliflower. My body doesn't tolerate them at all, I'm sorry to say. Not only does my upper GI react, mostly cranking up the nausea level although there's plenty of RUQ pain, but sometimes my immune system jumps in to the mix as well. Doesn't seem to matter how I prepare them or how rarely I eat them -- my body will have nothing to do with them. Of course, you still need to try them and see how your body will accept them. I get gas with broccoli and cauliflower and diarrhea with spinach, although less so since being on SCD, and I'm OK with kale. 2 other things to consider: Marilyn mentioned not digesting some kinds of lettuce -- well-cooked veges digest better! Also, there's the actual allergy issue, e.g. I recently learned that one of my mild allergies is to spinach. So it's best to try small quantities, well-cooked and not eat the same thing (or even same family) every day.
