Katy, My muffin pans are heavy-duty non-stick, and I do not need more than the " cheese oil " to grease them. However, if you're not sure how non-sticky you muffin cups are, I'd use the muffin papers just to be on the safe side. I did note that with the doubled eggs, at least one set did try to stick, but I advised them of their fate if they argued with me, and they let go. They've had bites of quiche, of all the souffle bread, of the avocado mayo, of the chicken I ground for chicken salad, of the spinach and DCCC stuffed pork roast, of the bison & broccoli pie....
