Guest guest Posted October 8, 2008 Report Share Posted October 8, 2008 Just a tip: here I was, making chicken soup for my mom just before she went into the hospital with CHF from having not taken her prescribed meds. Recipe calls for parsley, half the stems of a bunch. So, here I am with the other half of the stems, and an awful lot of parsley leaf. Sure isn't going to last until the next time I make soup. Ghu knows, I've thrown enough half-bunches of parsley out after they were, uhm, well past their expiration date, shall we say. As in, good grade of biological experiment. Not this time! I ran the parsley through my maverick grinder with a couple of cloves of garlic and some pecans (which is what I had handy) then added a bit of olive oil. Presto, pesto! Great topping for broiled fish or chicken, or a spread on SCD crackers or bread.
