Have you tried it just baked in water? Maybe it could have been the cooked olive oil that upset you as well as it gets oxidized if exposed to high heat...maybe weed out the possibilities before giving up on the butternut?

Good question. I don't know

Try it steamed and mashed (w/ mild spice and/or a bit of olive

oil/butter) and introduce it slowly.

Maybe you ate too much at once? It is rather starchy. I tolerate

butternut squash very well. I just cut it in half, steam it, and eat

it plain or with a little cinnamon. BUT if I eat more than a quarter

of a small one in one day I get a tummy ache too.
