But my opinion is that eating foods raw or lightly steamed doesn't do those of us with compromised digestive systems any good if our bodies can't process them and they end up causing intestinal damage... I think that those of us on SCD still get enough nutrition from our cooked veggies due to the volume we consume. At least that has been my experience. My blood work continues to show good levels of vitamins and minerals since my 2nd year on SCD, although I do have a few mineral and B12 deficiencies that I have to supplement -- but I also have some neuropathies, which are causing malabsorption issues. In other words, my nutrition has improved overall since being on SCD. My body is no longer stressed by trying to cope with complex carbs and starches, so it can better utilize what I'm consuming. My upper GI disorders don't tolerate fiber, so I can't go back to eating raw or lightly steamed veggies. Well, I could eat them but would be in pain and nausea 24/7, so that's not an option [grin]. So I don't have a choice but to continue eating well-cooked veggies. But because I eat a lot of those veggies my body tolerates, I'm still getting enough nutrition. Guest guest Posted November 11, 2008 Report Share Posted November 11, 2008 thank you - someone mentioned drinking the water or using it for broth to get nutrients too -thought you may want to do that if you don't already????- I feel like my scd diet is so healthy compared to the old me - but with my hair thinning/loss hubby said maybe i'm missing something from my diet even though my scopes showed no inflammation - could i still not be absorbing some stuff or maybe I shopuld eat more of thwe veges I tolerate like you do thanks eileen > > Hi Eileen > > I know that cooking foods does remove some of the nutrient value.
