It says in the instructions to always use the dough hook when making yeast bread, I thought you all were using just the higher speed and the regular flat beater, is that right? I also got my new order of bread mix from 'Cause You're Special Co. and I am anxious to get started using the new mixer. I have always used a hand mixer before and thought this might help with the gluten-free bread. This group has been such a help to me in my new way of cooking. Guest guest Posted February 15, 2006 Report Share Posted February 15, 2006 I use the flat beater for GF bread dough - it has a different texture and acts differently than wheat bread, so mixing/baking instructions meant for gluten bread often need a little alteration to work with Gf breads. I usually use the whip for cakes, icing, whipped cream, egg whites, and even potatoes. I use it for thinner batters or if I want the end product to be really smooth. I love my Kitchen Aid! It is definitely my best friend for cooking.
