Guest guest Posted November 13, 2008 Report Share Posted November 13, 2008 I ate butternut squash for the first time some days ago. WOW! super yummy. BUT my tummy wasn't so happy for a few days. I can't see I changed anything except the squash. My question is: does the way it is cooked make a difference? I cut it in smaller chunks with the peel on and poured some olive oil over it and some salt and then put it in the bottom of the oven while I was grilling some chicken. It got sort of caramelized. I didn't eat the peel, but I wonder if the caramalizing is bad... I have a vague memory of having read that the sugar changes when food becomes caramelized. Does this ring any bells with anyone? One thing I noticed was I went sort of crazy over the squash, I couldn't stop eating it, which to me is a sign that it was probably not so good for me LOL Cecilia Quote Link to comment Share on other sites More sharing options...
