Yes, friends, it is possible to use Atkins Roll for pizza crust. And it makes a passably good pizza, I must say. Here's what I did.

Make a recipe of Atkins Rolls using 3 eggs. This will make a 12 inch pizza crust. Make it as you usually would, being sure to make your eggs whites as stiff as possible before folding in the yolk mixture. Toss in a teaspoon of Italian herb mix. Then here's the tricky part.

As you know, Atkins Roll batter bakes up and sticks really easily. I use Silpat baking mats on my cookie sheets and it eliminates the sticking problem, but you could also use parchment paper. Place all the batter in the middle of a large well-greased cookie sheet, or one lined with either a Silpat mat or parchment paper. With your rubber scraper, work gently to form the batter into a 12 inch circle, making sure that the edges are somewhat higer than the insides, so when it is finished baking, it will resemble a pizza crust. The whole thing should end up being no more than 1/2 inch in height in the middle before baking.

Place in a preheated 300 degree oven, and bake for 40 minutes until golden brown.

Now, when you remove it from the oven, you'll want to cool it completely. Since I use Silpat mats, I just removed the mat to my cooling rack, and after a minute or two, transferred it off the mat and directly onto the wire cooling rack. Cool it completely before proceeding, perhaps a half hour or so.

When ready to make your topping, put the crust onto a pizza pan and spread on no more than 1/2 cup of pizza sauce. I found one with 7 grams of carb per 1/4 cup serving. Don't make it too saucy! Spread the sauce to within 3/4 to 1/2 inch of the edge of the crust. On top of the sauce, I sprinkled a couple of tablespoons of chopped onion, then a layer of shredded mozzarella/provolone cheese blend, then some chopped pepperoni, then a layer of parmesan cheese, then another layer of shredded mozzerella cheese.

When constructed, place in the oven at 400 degrees for 15 minutes or so, until the cheese is bubbly, melted, and as browned as you like it.

This makes 8 nice slices of pizza, and it was delicious! It's amazing how much it looks like real pizzaria pizza.
