Cooking legal bacon

If bacon is sugar free, does it still need to be cooked till it's

crispy? Or can I cook it so that it's still moist and chewy?

On a different note, I posted earlier that I emailed Beeler about the

ingredients in their ham and bacon. Unfortunately, it's not sugar

free. They said they smoke it with a little turbinado (raw) sugar

since they don't cure with nitrites/nitrates. Dang, I was hoping to

find some legal ham.
