It's easy. Boil water. Add boiling water to shredded

coconut in a 3:2 ratio (3/3 cup of water to 2/3s cup

shredded coconut and etc.) Allow to sit for at least 5 minutes.

Blend them together for several minutes. Then

strain using fine meshed strainer or old thin tea towel.

wring coconut to get out as much liquid as you can.

Eh voila! coconut milk.

I'm trying to decide which would be easier to make and find. Are there

any brands of pre made coconut milk that happen to be legal? If not,

how do I make coconut milk? If it is complicated spare me... I know how

to make almond milk, but somehow cannot find safe almonds. I guess I'm

going to have to give in and order them online. Online shopping is just

so damn frustrating! Are there any significant differences in the

typical digestability of either? Health benefits? I may even consider

switching on and off between the two types of yogurt. Thanks for the

help. Leah

Actually, Trader's only makes a Light coconut milk, not as nutritious,

but yummy. Natural Value makes a legal coconut milk -- ask your local

natural foods store to order you a case :)

I'd love to hear how your yogurts turn out -- I'm hoping to make some

dairy-free yogurts for my little one, but haven't tried any yet.

Actually the Natural Value coconut milk would not be legal. From a

vendor's website:

Natural Value Organic Coconut Milk.

INGREDIENTS: Pure Organic Coconut Extract, Water, Guar Gum (less than

1%).

I would suspect Trader Joe's would not be legal either, but I haven't

checked.
