Guest guest Posted April 29, 2001 Report Share Posted April 29, 2001 Garlic-Lime Marinated Chicken - Low Carb1/4 cup lime juice 1/3 cup olive oil 1 teaspoon garlic powder 1 teaspoon crushed dried cilantro leaves 1/4 teaspoon ground red pepper 1/4 teaspoon ground cumin 1/4 teaspoon salt 1 1/2 pounds boneless, skinless chicken breasts, (*see note) In a glass dish or large self-closing plastic bag, combine ingredients. Add chicken, turn and coat. Refrigerate 15 to 20 minutes. Remove from marinade and grill or broil 5 to 7 minutes per side.Baste with leftover marinade during cooking, if desired. No matter what method you use for cooking chicken, the most accurate test for doneness is a meat thermometer. Since chicken is never ready to be served unless it is done, always be sure it is completely cooked.
