Guest guest
Hi Marilyn. I had spotted the recipe at www.screcipe.com but assumed it wasn't possible for me to make, because of those apple slices, to which I'm allergic. Now that I've read your notes about substituting other fruits, I am optimistic. Do I understand correctly that the dried apple slices can be replaced with dried fruit that I'm not allergic to, such as dried unsweetened cherries, dried unsweetened blueberries, or dried unsweetened dates? Last summer, I rinsed, pitted, and then froze, several cups of cherries. But I used most of them to make frozen cherry yogurt. I'm not sure what quantity of cherries I still have in the freezer, nor what volume they will have once I puree them. If I don't have 2 cups of cherry puree, can I just puree some other frozen berries without spoiling the results too much? I'll try not to substitute any other ingredients, just so that I get some semblance of your original version :-) Thanks. Serious CHERRY flavor! The first time I made it, the cherries were juicier than I anticipated, and the only thing I had handy was some dried Granny apple slices, so I used those, and they worked well, and were less expensive than the all cherries. — Marilyn New Orleans, Louisiana, USA Undiagnosed IBS since 1976, SCD since 2001 Darn Good SCD Cook No Human Children Shadow & Sunny Longhair Dachshund

Ellen, Absolutely you can substitute dried unsweetened blueberries or cherries or dates. The recipe as posted used home-dried apple slices because that's what I had handy when I was first putting it together. As for using mixes of berries, that, too, works. Mara just did one with blueberries, cherries, and cranberries, and said it turned out great. I made this recipe for a friend of mine while I was in Ireland, and used some apples, some pears, and, I think, a ripe banana because that was what was handy. I highly recommend using the Bundt pan, as this is a very moist cake, and is likely to be kind of pudding-like in the middle if you using a regular cake pan or pans. — Marilyn New Orleans, Louisiana, USA Undiagnosed IBS since 1976, SCD since 2001 Darn Good SCD Cook No Human Children Shadow & Sunny Longhair Dachshund

You can use fresh frozen cherries, definitely. I di not use any canned fruit except for one follows the SCD dictate of " canned in its own juice " OR home canned with no illegals. I'm still working on a cook book.
