This recipe looks fine and delicious to me. If you want to sub something for the yogurt, use the same amount of DCCC, beaten smooth. I've made a few minor changes to the recipe to better suit my digestion. I can't handle anything made with 100% almond flour, so I use about one third almond flour, and the rest pecan or pecan and walnut flour. My upper GI dysfunctions severely limit my fat intake, but I have no problems with using the egg yolks along with the whites. So I haven't tried using just egg whites. I don't tolerate dairy, so I leave out the yogurt. I do use butter. To add more liquid to the batter I use a bit of orange juice because I add grated orange peel to my dry ingredients. I love the combination of dates and orange. I don't add any extracts to this recipe. I have the orange peel and orange juice to add a good flavor. For the past two years I've also added chopped walnuts to this recipe. I get cravings for walnuts... But that was after 3 years on SCD; couldn't handle chopped nuts in recipes until then.
