Hello

My daughter who is 13 years old is really hoping to have some

bread or muffins for Christmas. She has been on the SCD since September

and doing better. Does anyone have recipes for breads, pancakes or

muffins using pecan or cashew flour? She is sensitive to almond flour.

A lot of the recipes call for almond flour... So far she only eats the

souffle bread made with eggs. Thanks

You can substitute and put pecan or cashew flour where you see almond

flour. It works for me.

Hello,There are several recipes at http://www.pecanbread.com/new/recipes1.html that use cashew or pecan flour or butter. The Cashew Butter Muffins are really good. You can also substitute pecan or cashew flour in any recipe that calls for almond flour. I really like this pancake recipe, http://nomorecrohns.com/Documents/Jim'sFluffyPancakes.pdf and the Cinnamon Cookies from Lucy's Cookbook are my favorite cookies.Best wishes,Kim H.husband, , CD 1999SCD 2002

before you jump in there are some yummy things without flour - i just

made some pecan flour and will try soon but for now you can do the

pecan butter muffins or pecan butter brownies for starters - pecans

are easiest

Hi Kim.

See message 12806, " Pecan Butter Brownies by another name " at

http://health.groups.yahoo.com/group/BTVC-SCD

for my version of the brownie recipe.

At the bottom of that message, you will see the recipe for Bev's " Nut Butter

Brownies " at www.pecanbread.com for the original recipe, which I think was

made with peanut butter. Pecan butter is much easier to digest than peanut

butter. Nut butters can be introduced before nut flours on SCD.

These " brownies " or squares are delicious, and they continue to be one of my

favourite treats, long after I started baking with nut flours.

You will have to decide at what point it is safe to incorporate nut flours

into 's diet.

Sorry, but I don't have any recipes for pecan or cashew flour breads. I

would assume that any recipe written with almond flour would work with

finely ground pecans as well. The tricky part is in determining visually

when the bread is baked, as pecan flour does not turn " golden " the way

almond flour does when baked. It does turn very dark brown when burned :-(
