Unfortunately a lot of red meat is of the wrong quality. It is wrong in its fat content, the animals were stressed and the meat is too fresh (not hung). Try game. See if you can find moose, elk or caribou. Try eating the meat dried raw. Raw meat is the most easily digestable thing after breastmilk. Or if you want to try, take the beef you buy, cut it in long strips and hang for a day or two (in the fridge if you get worried) Humans are actually built to eat carrion, something that is not so popular to talk about LOL Beef is not as good as game though Here is a place with lots of ways to dry meat. I don't think I was ever as ill as you, but it might be worth a try. I dried moose meat for years and always ate that for breakfast, it made me regular, and if I stopped eating it my problems would come back (I was eating starchy vegetables at the time, not knowing better). If one reason you chose not to eat meat was for the animals sake, game is also great because the animals have a good natural life before dying, with natural foods and they are not stressed at slaughter houses. Another trick I was told years ago was to eat lots of fat. So I often made pemmican, one part fat, one part meat. I used coconut fat mostly.
