After going through the fridge and tossing expired foods, I found a bulb of ginger that could be used up. So, I peeled it and cut it into thin slices adding it to the apples that were simmering in the pot. After they finished, I blended it up into the sauce and WOW..ginger adds a wonderful zing to applesauce! I will be making this again!! So, if you like ginger and tolerate it as well as cooked apples, you should give it a try, even if only for something different! I used about 10 peeled apples of different variety and 2-3 inches (long) X 1 inch (wide) piece of ginger (yielded 2 quarts of applesauce). YUM!!
