Hey Eileen,

Don't freak out it's totally legal. The yogurt ferments right?

So simplified you can look at it that the good bacteria need something

to eat. All of that sugar (sucrose) gets converted.

It's ok! As Marilyn quotes " don't panic "

No, they didn't change. It's an offering to the yogurt fairies to get

them to come out and dance for us.

Seriously, it is bacteria-food, to get the bacteria to wake up and start

doing their thing, and it's eaten up in the first couple of hours of

fermentation.
