Hello...

I don't make fish, so I can't help you there. However, I do make

chicken strips/fingers/burgers on a regular basis and we love this

recipe!

I make these in a deepfryer. I just have a FryDaddy that I got at

Walmart...nothing fancy, but it works very well.

In one bowl combine: two cups of Bette Hagman GF flour mix with about

2 heaping tablespoons of paprika, seasoning salt and pepper to taste.

(The Bette Hagman GF Flour Mix Recipe is: 3 cups white rice flour, 1

cup potato starch (NOT potato flour) and 1/2 cup tapioca starch.)

In another bowl combine three eggs and about 1/2 cup of milk.

Cut several chicken breasts into strips for chicken fingers/strips or

cut into larger pieces if you want to make chicken burgers. When

making chicken burgers, you will probably want to pound out the

chicken breast to about 1/2 inch thickness so that it won't get too

thick to bite into.

Dip the chicken pieces into the milk/egg mixture, then into the dry

mixture. Then repeat by dipping into the milk/egg mixture and dry

mixture again. (Makes two coats)

Place several pieces into the hot oil, but try not to put too many in

at one time so that you don't lower the temperature of the oil too

much. Cook until the chicken is cooked through the middle. Remove

from the hot oil and let drain on folded paper towels for a bit. You

might want to salt them again at this stage, depending on how much

salt you added in the beginning...it's easier to add more salt at this

point than to take it away earlier! If your oil is at the right

temperature, you will be surprised at how little oil is absorbed

during the frying process.

Depending on how much chicken you have to coat, you may need to mix up

additional dry mixture or egg/milk mixture. I keep a container of the

dry mixture already made so that I can just add however much I need

each time.

Eat along with your favourite dips....yum!

For a variation on chicken burgers: try tossing the finished chicken

burger patty in a bowl with some 's hot wing sauce, then place on

a bun spread with ranch dressing and topped with lettuce and

tomato...soo good! :)
